lebensmittel-changedCutting with jets of pure water is well established in the foodstuffs industry. It is used mainly for portioning meat, fish, cakes, pizzas, and bars of chocolate. The foods are usually in a cooled state when they are sliced. When cutting food, the "tool" (i.e. the jet of water) never gets dirty, and so it meets the most rigorous of hygiene standards.
